Like many fellow Canadians, I love to celebrate with food. Can you relate?
Being with my family and friends (socially distanced, and safe of course) really makes Canada Day celebrations memorable.

Cooking For Canada Day
While enjoying food and celebrating July 1st is great – I don’t always feeling like spending my day in a hot kitchen cooking up a storm so I’ve got some tasty, fun and easy recipes as well as ideas to share with you.

Coconut Raspberry Popsicles
Refreshing and tasty – these popsicles will be a hit for everyone!

1 cup fresh raspberries
3 teaspoons honey, divided
1 cup full-fat coconut milk
Instructions:
- Place the raspberries and 1 teaspoon of honey in a small blender or food processor and process until they are pureed. In a small bowl, mix the coconut milk with the remaining 2 teaspoons of honey.
- Divide half the raspberry puree between 4 small popsicle molds, top with 1/4 cup of coconut milk then the remaining raspberry puree. The raspberry puree is quite thick so you may need to spread it out on top with the popsicle sticks. To create a streaky look, push the popsicle stick down along the edge of the mold a few times.
- Freeze until firm, at least a few hours. To release the popsicles from the molds run them briefly under warm water.

Easy Italian Pasta Salad
This is also a super easy recipe, and yields large batches so everyone in the fmaily will have second helpings.

INGREDIENTS
1. 1 cup cooked rotini pasta
2. 1 cup cherry tomatoes, halved.
3. 1 cup salami – cut into small pieces
4. 1/2 cup Italian dressing, 2-3 tbsp olive oil
5. 1 1/2 tsp each: salt, pepper, italian seasoning, garlic powder
6. 1-2 cups bocconcini pearls (mozzarella)
7. 1 whole cucumber, quartered.
Cook the pasta according to package directions. While the pasta is cooking, slice and dice all of your veggies.
Drain pasta, and run under cold water.
Mix up your sauce, add in the oil, toss until everything is coated and enjoy!
